When you try to make raw vegan cheese & it comes out tasting like Pâté...😅

So I wanted to try making homemade raw vegan cashew cheese after work this week. I've been spending way too much money on raw cashew store bought cheese. I had all my ingredients ready to go but then I realized I had to soak the raw cashews for 2 hours, which I hadn't prepped 😐. 


I decided to experiment, and used the raw pine nuts I had at home instead. I thought pine nuts would have a similar flavor, and since they are a soft texture I figured they would be fine in the food processor without soaking. 


So I made the recipe and it came out good! But it didn't quite taste like cheese. After chilling it for a few hours I tasted it again and came to the conclusion that I had just made raw vegan pâté!


Here's the recipe:

1 1/2 cup raw pine nuts

2 tablespoons nutritional yeast

2 tablespoons freshly squeezed lemon juice

¼ teaspoon garlic powder (for stronger garlicky flavor, use ¾ teaspoon garlic powder or 1 crushed garlic clove instead)

½ teaspoon salt (more as needed)

¼ teaspoon freshly ground black pepper

¼ cup water (more as needed)


You can serve this as a dip or you can use it as a spread for veggie sandwiches and wraps. 😃
